Coconut cream pie
Ingredients/Components
- sugar - 3/4 c
- milk
- vanilla extract - 1/2 tsp
- flour - 1/2 tsp
- butter - 2 Tbsp
- cornstarch - 2 Tbsp
- almond extract - 1/4 tsp
- heavy cream - 1 c
- egg whites - 2 item
- egg plus 2 egg yolks - 1 item
- fresh or flaked coconut - 3/4 c
How to make coconut cream pie:
Scald 1/2 of the milk, 1/2 cup of sugar and salt. Bring to a boil. Mix flour, cornstarch, beaten egg and yolks with the remaining milk and beat until smooth. Add a little of the hot milk and blend. Combine both mixtures and cook over hot water until thick, stirring frequently. Beat until smooth.Beat the egg whites until fluffy. Add the remaining sugar and beat until stiff. Fold the custard into whites. Sprinkle 1/4 cup coconut through the mixture and pour into baked pie shell.
Whip cream and spread on top. Cover with remaining coconut and chill.
