  • sugar - 3/4 c
  • eggs - 3 item
  • vanilla - 1 t
  • milk - 2 c
  • salt - 1/4 t
  • flour - 1/3 c
  • butter - 2 Tbsp
  • coconut - 1 c
  • baked pie shell - 1 item

How to make coconut cream pie:

Combine sugar, flour, and salt over med. heat. Gradually add the milk. Cook and stir until mixture boils and thickens. Cook for 2 minutes. Remove from heat. Separate eggs, reserving whites for meringue. stir 3 yolks slightly and stir a small amount of hot mixture into. Then return to hot mixture and cook 2 minutes stirring constantly.

Remove from heat and add butter, vanilla, and coconut. Cool, stirring occasionally. Pour into baked pie shell.
