  • water - 1 c
  • oil - 1/3 c
  • confectioners sugar - 1/4 c
  • dairy sour cream - 1/4 c
  • flaked coconut - 1/3 c
  • box Duncan Hines cake mix - 1 item
  • whipping cream, chilled
  • 4 serving size box coconut cream instant pudding mix - 1 item

How to make coconut cream cake:

Frosting:2 c. whipping cream, chilled1/4 c. confectioners sugar1/4 c. dairy sour cream2 1/2 c. flaked coconut Preheat oven to 350°. Grease and flour two 9-inch round cake pans. Combine cake mix, pudding mix, eggs, water and oil in a large bowl. Beat for 2 minutes. Stir in 1/3 cup coconut. Pour in pans. Bake at 350° for 35 minutes.

Frosting: Place chilled whipping cream in a large bowl. Beat until soft peaks form. Add confectioners sugar and sour cream. Fold in 1 1/2 cups coconut. Sprinkle with remaining 1 cup coconut.
