Ingredients/Components
- sugar
- eggs - 3 item
- vanilla - 1 tsp
- salt - 1/2 tsp
- flour - 2 c
- stick margarine - 1 item
- egg yolks - 3 item
- oil - 1 c
- soda - 1 tsp
- buttermilk - 1 c
- baking powder - 2 tsp
- Continue blending as oil and buttermilk are added
How to make coconut cake:
Beat eggs until thick; blend sugar and eggs. Continue blending as oil and buttermilk are added. Beat 2 minutes on medium speed. Mix dry ingredients and sift. Blend in dry mixture; add vanilla. Divide batter equally into 3 greased and lightly floured 8-inch round cake pans. Bake at 350° for 25 minutes. Cool on rack.Filling:1 c. fresh coconut milk (add evaporated milk to make full c.)1 tsp. vanilla1 stick margarine3 egg yolks1 c. sugar Combine all the ingredients and cook until thick. Add 3/4 cup grated fresh coconut and 1/2 cup chopped nuts. Spread this mixture between layers.
