Ingredients/Components
- eggs - 4 item
- vanilla - 1/2 1
- pkg - 1 oz
- chopped nuts - 1 c
- water
- oil - 1/4 c
- confectioners sugar - 1 lb
- flaked coconut
- white or yellow cake mix - 1 layer
- Jell-O brand vanilla flavor instant pudding and pie filling - 1 serving
- Blend at medium speed for 4 minutes
How to make coconut cake:
Combine cake mix, pudding mix, water, eggs and oil in large mixing bowl. Blend at medium speed for 4 minutes. Stir in coconut and nuts. Pour into greased and floured (I use Pam) 11 cup ring mold or 10-inch tube pan. Bake at 325° for 60 minutes. Cool 15 minutes. Remove from pan. Cool on rack.Coconut Cream Cheese Frosting:1/3 c. butter1 (8 oz.) pkg. cream cheese1 lb. confectioners sugar1/2 to 1 tsp. vanilla Cream butter, cream cheese and sugar. Add vanilla.
