  • vanilla - 1/2 tsp
  • chopped pecans - 1 c
  • pkg - 1 1/2
  • milk - 2 tsp
  • water
  • coconut - 2 c
  • vegetable oil - 1/4 c
  • powdered sugar
  • yellow cake mix - 1 pkg
  • butter, divided
  • eggs room temperature - 4 item

How to make coconut cake:

Frosting:4 Tbsp. butter, divided2 c. coconut1 (8 oz.) pkg. cream cheese2 tsp. milk1/2 tsp. vanilla3 1/2 c. powdered sugar Cake: In large bowl, blend cake mix with pudding, water, eggs and oil. Beat at medium speed for 3 minutes. Stir in coconut and nuts. Pour into 3 greased and floured cake pans or one 9 x 13-inch pan. Bake at 350° for 25 to 30 minutes, or until cake springs back when touched in center. Let cake cool.

Frosting: Melt 2 tablespoons butter. Add coconut; brown, stirring constantly over low heat. Let drain over paper towel. Cream the 2 tablespoons remaining butter with cream cheese, milk and vanilla. Add sugar, beating well to blend. Stir in 1 1/2 cups coconut. Frost cake; sprinkle remaining coconut over cake.
