Coconut cake



  • sugar - 2 c
  • eggs - 4 item
  • milk - 1 c
  • vanilla extract - 1 tsp
  • salt - 1/4 tsp
  • almond extract - 1 tsp
  • baking powder - 1 Tbsp
  • sifted cake flour - 3 c
  • margarine, soft - 1 c
  • grated coconut, divided - 2 c

How to make coconut cake:

Cream butter; gradually add sugar, beating well. Add eggs, one at a time, beating well after each. Combine flour, baking powder and salt; add to creamed mixture alternately with milk, beginning and ending with flour mixture. Mix after each addition. Stir in flavorings. Pour into 3 greased and floured 9-inch round cake pans. Bake at 350° for 25 to 30 minutes. Cool in pan 10 minutes. Remove from pans and cool completely. Frost with White Mountain Frosting. Sprinkle coconut between layers, top and sides of cake.
