Ingredients/Components

  • butter - 1/2 c
  • sugar - 1 c
  • eggs - 3 item
  • pastry flour - 2 c
  • baking powder - 2 tsp
  • milk - 1/2 c
  • vanilla - 1 tsp
  • Add eggs beaten, then milk
  • water - 1/2 c
  • egg whites - 3 item
  • rose extract or vanilla - 1/4 tsp

How to make coconut cake:

Cream butter and sugar well. Add eggs (beaten), then milk. Add flour last, sifted with baking powder. Bake in a moderate oven about 15 minutes. This makes 2 thick or 3 thin layers.Icing:2 c. sugar1/2 c. water Baker's canned coconut3 egg whites1/4 tsp. rose extract or vanilla Cook sugar and water until it threads and beat whites of 3 eggs until very light. Pour sugar over egg whites slowly and beat until creamy. Add 1/4 rose extract or vanilla. Spread over cake. Sprinkle Baker's canned coconut thickly between layers and over top and sides.
