Ingredients/Components
- butter - 1/2 c
- sugar - 1 c
- eggs - 3 item
- pastry flour - 2 c
- baking powder - 2 tsp
- milk - 1/2 c
- vanilla - 1 tsp
- Add eggs beaten, then milk
- water - 1/2 c
- egg whites - 3 item
- rose extract or vanilla - 1/4 tsp
How to make coconut cake:
Cream butter and sugar well. Add eggs (beaten), then milk. Add flour last, sifted with baking powder. Bake in a moderate oven about 15 minutes. This makes 2 thick or 3 thin layers.Icing:2 c. sugar1/2 c. water Baker's canned coconut3 egg whites1/4 tsp. rose extract or vanilla Cook sugar and water until it threads and beat whites of 3 eggs until very light. Pour sugar over egg whites slowly and beat until creamy. Add 1/4 rose extract or vanilla. Spread over cake.
