Ingredients/Components

  • 2 sticks butter at room temperature - 1 c
  • sugar - 2 c
  • eggs - 4 item
  • sifted self-rising flour - 3 c
  • coconut milk - 1 c
  • pure vanilla - 1 tsp
  • Grease and flour 3 9 inch cake pans
  • cream of tartar - 1/4 tsp
  • salt - 1/8 tsp
  • water - 1/3 c
  • egg whites - 2 item
  • vanilla
  • Beat with handheld electric mixer for 1 minute
  • sour cream - 1 c
  • milk - 4 Tbsp
  • flaked coconut - 1/2 c

How to make coconut cake:

Preheat oven to 350°. Grease and flour 3 (9 inch) cake pans. Using an electric mixer, cream butter until fluffy. Add sugar and continue to cream well for 6 to 8 minutes. Add eggs, one at a time, beating well after each addition. Add flour and milk alternately to creamed mixture, beginning with flour. Add vanilla and continue to beat until just mixed. Divide batter equally among prepared pans. Level batter in each pan by holding pan 3 or 4 inches above counter, then dropping it flat onto counter. Bake for 25 to 30 minutes or until done.Frosting:1 1/2 c. sugar1/4 tsp. cream of tartar1/8 tsp. salt1/3 c. water2 egg whites1 1/2 tsp. vanilla Place sugar, cream of tartar, salt, water and egg whites in top of double boiler. Beat with handheld electric mixer for 1 minute. Place over boiling water, being sure that boiling water does not touch the bottom of the pan (if this happens, it could cause your frosting to become grainy). Beat constantly on high speed with electric mixer for 7 minutes or longer. Beat in vanilla.Filling:3/4 c. sugar1 c. sour cream4 Tbsp. milk1/2 c. flaked coconut Remove cake from oven and let cool. Place 1 cake layer on cake plate. Using wrong end of a wooden spoon, poke holes in the layer until all the layer has been poked. Spread 1/3 of the filling on the layer. Repeat process with other layers. You may have to use toothpicks to prevent the cake from shifting. (Don't forget to remove all the toothpicks before frosting cake.) This cake is best if you can put
