Ingredients/Components

  • milk - 2 c
  • salt - 1/2 tsp
  • flour
  • nutmeg - 1/8 tsp
  • cold water
  • eggs, beaten - 4 item
  • shortening - 3 Tbsp
  • unsifted flour - 1 c
  • dash of pepper - 1 item
  • finely chopped onion - 1/4 c
  • grated Swiss cheese - 1 c
  • cold butter or margarine - 3 Tbsp
  • Cut in butter until consistency of small peas

How to make classic quiche lorraine:

Sift together flour and salt; cut in shortening until consistency of meal. Cut in butter until consistency of small peas. Stir in cold water and blend lightly, just until dough holds together and can be rolled into a ball. Roll out to fit a 9-inch pie plate or quiche dish. Microwave on High for about 4 to 6 minutes, rotating dish frequently and pricking any large air bubbles that form with a fork.Filling:6 strips bacon, cooked, drained and crumbled1 c. grated Swiss cheese1/4 c. finely chopped onion1 1/2 Tbsp. flour1/4 tsp. salt1/8 tsp. nutmeg dash of pepper2 c. milk4 eggs, beaten Mix flour, salt, nutmeg and pepper. Gradually stir in milk, being careful to add milk slowly to prevent lumps. Microwave on Medium-high for 7 to 8 minutes, stirring every 2 minutes. In a 1-quart dish, beat eggs. Stir hot milk mixture, slowly, into beaten eggs, stirring constantly. Microwave on Medium-high for about 1 to 2 minutes, stirring every 30 seconds, until thick. Line bottom of baked pastry with the bacon, onion and 1/2 of cheese. Add milk and egg mixture. Sprinkle with rest of the cheese. Sprinkle with paprika. Microwave on Medium-high for 6 to 8 minutes, turning every 2 minutes, until center is set. Take out of oven and let stand 5 minutes. Yield: 6 main dish servings.
