Ingredients/Components

  • milk - 1 c
  • salt - 1/2 tsp
  • flour - 1 Tbsp
  • light cream - 1 c
  • beaten eggs - 4 item
  • dash of ground nutmeg - 1 item
  • shredded Swiss cheese
  • slices bacon - 8 item
  • medium onion, sliced - 1 item
  • pastry for 9-inch quiche pie pan

How to make classic quiche lorraine:

Bake pie crust at 450° for 10 minutes. In a skillet, cook bacon until crisp; drain, reserving 2 tablespoons of the drippings. Finely crumble bacon and set aside. Cook onion in the reserved drippings until tender; drain.

In a small bowl, combine eggs, cream, milk, flour, salt and nutmeg. Stir in the bacon, onion and cheese; mix well. Pour into pastry shell. If necessary, cover edge of crust with foil to prevent overbrowning. Bake at 325° for 45 minutes. Let stand 10 minutes.
