  • margarine - 1/3 c
  • sugar - 1/3 c
  • egg - 1 item
  • flour
  • pkg
  • lemon juice - 1 Tbsp
  • lemon rind, grated - 1 tsp
  • vanilla - 1/2 tsp
  • eggs - 3 item
  • dairy sour cream
  • preserves - 3/4 c

How to make classic cheesecake:

Filling:2 (8 oz.) pkg. cream cheese1/2 c. sugar1 Tbsp. lemon juice1 tsp. lemon rind, grated1/2 tsp. vanilla3 eggs Topping:1 c. dairy sour cream1 Tbsp. sugar1 tsp. vanilla3/4 c. preserves Crust: Cream margarine and sugar until light and fluffy; blend in egg. Add flour; mix well. Spread dough onto bottom and 1 1/2 inches high around sides of 9-inch spring-form pan. Bake at 450° for 5 minutes.

Filling: Combine softened cream cheese, sugar, lemon juice, rind and vanilla, mixing at medium speed on electric mixer until well blended. Add eggs, one at a time, mixing well after each addition. Pour mixture into pastry lined pan; bake at 325° for 50 minutes.

Topping: Combine sour cream, sugar and vanilla; mix well. Spread evenly over cake. Continue baking for 10 minutes. Loosen cake from rim of pan; cool before removing rim of pan. Chill. Spread with preserves.
