Ingredients/Components
- finely chopped clams - 2 c
- well-beaten egg yolks - 2 item
- cracker crumbs - 1 c
- salt and pepper to taste - 1 item
- pinch of cayenne - 1 item
- finely chopped parsley - 1 Tbsp
- enough clam juice to make a heavy batter - 1 item
- stiffly beaten egg whites - 3 item
How to make clam fritters:
Mix clams with egg yolks, cracker crumbs, salt, pepper, cayenne, parsley and clam juice. Fold in egg whites. Drop the batter by spoonfuls into hot (370°) fat. Cook until they are brown on both sides, turning once. Drain on paper towels.Recipe categories: Seafood, Shellfish, Clams.
