Ingredients/Components

  • finely chopped clams - 2 c
  • well-beaten egg yolks - 2 item
  • cracker crumbs - 1 c
  • salt and pepper to taste - 1 item
  • pinch of cayenne - 1 item
  • finely chopped parsley - 1 Tbsp
  • enough clam juice to make a heavy batter - 1 item
  • stiffly beaten egg whites - 3 item

How to make clam fritters:

Mix clams with egg yolks, cracker crumbs, salt, pepper, cayenne, parsley and clam juice. Fold in egg whites. Drop the batter by spoonfuls into hot (370°) fat. Cook until they are brown on both sides, turning once. Drain on paper towels.
