Clam chowder
Ingredients/Components
- salt and pepper - 1 item
- medium onion, chopped fine - 1 item
- milk or half and half - 3 c
- boiling salted water - 2 c
- slices crisp fried bacon, crumbled - 3 item
- to 4 medium potatoes, thinly sliced - 2 item
- cooked clams, drained - 2 c
How to make clam chowder:
Fry bacon, then saute onions in 2 tablespoons bacon fat. Simmer potatoes in water until tender. Add bacon, onion, salt and pepper to cooked potatoes. Simmer 5 to 10 minutes. Add milk and bring to boil. Add clams and barely heat. Serve with a dollop of butter and a pinch of thyme. Top with parsley.Note: This is very good! Hope you enjoy it.
