Ingredients/Components

  • lb finely ground chuck - 1 item
  • medium onions, chopped fine - 2 item
  • cloves garlic, minced - 2 item
  • c tomato sauce - 1 item
  • c water - 1 item
  • Tbsp catsup - 1 item
  • Tbsp red wine vinegar - 1 item
  • Tbsp chili powder - 1 item
  • Tbsp paprika - 1 item
  • tsp black pepper - 1 item
  • tsp honey - 1 item
  • tsp ground cumin - 1/2 item
  • 1/2 oz unsweetened chocolate, grated - 1 item
  • tsp turmeric - 1/2 item
  • tsp marjoram - 1/2 item
  • tsp allspice - 1/2 item
  • tsp nutmeg - 1/4 item
  • tsp cinnamon - 1/2 item
  • tsp ground cloves - 1/4 item
  • tsp mace - 1/4 item
  • tsp ground coriander - 1/4 item
  • tsp ground cardamon - 1/4 item
  • dry bay leaf, crumbled - 1/2 item
  • tsp salt - 1 item
  • oz thick spaghetti, cooked - 8 item

How to make cincinnati five-way chili:

Salt a large cast iron skillet. Turn heat to medium and add meat, onions, and garlic. Cook until all meat is browned. Add tomato sauce, catsup, water and vinegar. As mixture begins to boil, add everything else. Adjust spices to taste, adding more salt if it needs perking up, turmeric and cumin for a sweatier chili flavor, cinnamon, cloves, and mace if you want it sweeter, cardamon for more bang, unsweetened chocolate for body.

Cover and simmer at very low heat for about 1 hour, stirring and tasting occasionally, adding tomato juice if it is getting too dry to ladle up easily.

Constructing the Chili: Layer on serving plate-spaghetti, the thickest you can find(or use perciatelli-a long, thin macaroni, broken into 4 inch lengths and boiled in salted water with 2 Tbsp olive oil. Melt a stick of sweet butter into cooked noodles.

Next comes the chili, ladle on enough to cover the noodles.

Next, kidney beans-heat with 2 c water, then drain. Add chopped onions, spread them out, to taste, over beans. Then spread the grated cheese to cover everything. You may desire to omit the beans or onions, or both. We always serve Cincinnati Chili with bowls of oyster crackers, a couple chili and cheese smothered wieners called 'coneys' in Cincinnati.
