Chunky pizza soup
Ingredients/Components
- oil - 1 Tbsp
- basil - 1/2 tsp
- shredded Mozzarella cheese - 1 c
- small onion, chopped - 1 item
- sliced mushrooms - 1/2 c
- green pepper, chopped - 1/4 c
- beef stock - 1 c
- can plum tomatoes, undrained - 1 oz
- pepperoni, thinly sliced - 1 c
How to make chunky pizza soup:
In saucepan, heat oil over medium heat. Stir-fry onion, mushrooms and green pepper until soft, but not browned. Add tomatoes, stock, pepperoni and basil. Cook until heated through. Ladle soup into 4 ovenproof bowls. Sprinkle with cheese. Broil until cheese melts and is bubbly or microwave on High for 1 1/2 minutes.Recipe categories: < 30 mins, Soups & stews, Beginner cook.
