Christmas stollen
Ingredients/Components
- sugar - 1 c
- milk - 2 c
- salt - 2 tsp
- flour - 8 c
- butter - 1 item
- water - 1/4 c
- nutmeg - 1 tsp
- eggs, beaten - 4 item
- raisins - 1 c
- grated lemon rind - 2 Tbsp
- grated orange rind - 2 Tbsp
- citron - 1 c
- shortening 2 c - 1 lb
- yeast cakes or dry powdered yeast - 2 item
How to make christmas stollen:
Scald milk. Pour over shortening, sugar and salt. Cool to lukewarm. Add eggs; add yeast that has been softened in 1/4 cup water.. Add 4 cups flour and beat. Add citron, raisins, rind, nutmeg and remaining flour. Knead and place in covered pan to rise 3 to 4 hours.Punch down and divide into loaves. Cover and let rise 1 1/2 to 2 hours. Bake at 325° for 50 minutes. While bread is still hot, spread butter over top of each loaf.
