Christmas fruit bars



  • eggs - 3 item
  • vanilla
  • brown sugar - 2 c
  • plain flour
  • dates, chopped - 8 oz
  • broken pecans - 2 c
  • 1/2 sticks oleo - 1 item
  • crystalized cherries, cut in half - 1 lb
  • crystalized pineapple, in chunks - 1 lb

How to make christmas fruit bars:

Sprinkle pecans over greased and floured 10 x 5 x 1-inch pan. Cream oleo and add sugar. Continue creaming. Add eggs, one at a time. Continue beating. Then add flour and vanilla; mix well. Press batter down over nuts (wetting your hands helps). Spread dates, then cherries and pineapple over batter. Wet hands and press down. Bake at 275° to 300° for 50 to 60 minutes. Yields about 60 bars.
