Chow-chow relish
Ingredients/Components
- sugar
- salt - 3 Tbsp
- vinegar
- ground ginger
- dry mustard - 2 tsp
- chopped onion - 2 c
- celery - 2 tsp
- mustard seed - 1 tsp
- chopped sweet pepper - 2 c
- chopped cabbage small head - 1 qt
- chopped cauliflower small to medium head - 3 c
- or 3 medium green tomatoes 3 to 4 small - 2 item
- or 3 long chopped hot peppers - 2 item
How to make chow-chow relish:
Spice Bag:1/2 tsp. ground ginger2 tsp. celery1 tsp. mustard seed2 tsp. dry mustard Combine chopped vegetables; sprinkle with salt and let stand 4 to 6 hours in a cool place. Drain well or overnight. Combine sugar and vinegar and spice bag. Let simmer 10 minutes. Pack in hot jars, leaving 1/8-inch headspace. Adjust caps.
