Ingredients/Components
- large onions - 3 item
- green tomatoes, stem ends removed - 5 item
- green peppers - 6 item
- pickling salt - 1/4 item
- vinegar - 2 c
- celery seed
- shredded cabbage - 1 c
- red peppers - 6 item
- cauliflower - 2 c
- hot red and green peppers 6 each - 12 item
- sugar - 3 c
- mustard seed - 1 Tbsp
- turmeric - 3/4 tsp
How to make chow chow:
Coarsely grind onions, tomatoes, green and red peppers, and (hot) green and red peppers. Add cabbage. Sprinkle with pickling salt. Let stand overnight. Rinse and drain.Combine the sugar, vinegar, mustard seed, celery seed, turmeric and 1 cup water. Pour over vegetables. Boil for 5 minutes. Put in hot jars, leaving 1/2 inch headspace. Place lids on jars and tighten. Process in boiling water bath (pints) for 15 minutes. Cool and re-tighten lids.
