Ingredients/Components

  • sugar - 3 c
  • cinnamon - 1/2 tsp
  • salt - 3/4 c
  • vinegar - 3 c
  • ginger - 1 Tbsp
  • ground cloves - 1/2 tsp
  • prepared mustard - 1 Tbsp
  • cabbage - 1/2 gal
  • turmeric - 1/2 tsp
  • cucumbers - 1/2 gal
  • green tomatoes - 1/2 gal
  • green bell peppers - 6 item
  • hot peppers optional - 6 item
  • onions medium to large - 6 item

How to make chow chow:

Chop green tomatoes, cabbage, cucumbers, green bell peppers, onions and hot peppers. (May be very fine if you like.) Mix together with salt and cover with ice. Let stand for 2 hours. Drain.

Combine sugar, vinegar, ginger, turmeric, ground cloves, cinnamon and prepared mustard. Bring to a boil. Add vegetables and bring back to boil. Simmer for 5 minutes. Pour into pint jars. Makes approximately 12 pints.
