Ingredients/Components
- sugar - 3 c
- cinnamon - 1/2 tsp
- salt - 3/4 c
- vinegar - 3 c
- ginger - 1 Tbsp
- ground cloves - 1/2 tsp
- prepared mustard - 1 Tbsp
- cabbage - 1/2 gal
- turmeric - 1/2 tsp
- cucumbers - 1/2 gal
- green tomatoes - 1/2 gal
- green bell peppers - 6 item
- hot peppers optional - 6 item
- onions medium to large - 6 item
How to make chow chow:
Chop green tomatoes, cabbage, cucumbers, green bell peppers, onions and hot peppers. (May be very fine if you like.) Mix together with salt and cover with ice. Let stand for 2 hours. Drain.Combine sugar, vinegar, ginger, turmeric, ground cloves, cinnamon and prepared mustard. Bring to a boil. Add vegetables and bring back to boil. Simmer for 5 minutes. Pour into pint jars. Makes approximately 12 pints.
