Ingredients/Components
- sugar - 5 c
- salt - 1/2 c
- vinegar
- ground ginger - 1 Tbsp
- celery seed - 3 Tbsp
- chopped cabbage - 4 qt
- mustard seed - 4 Tbsp
- turmeric - 1 Tbsp
- chopped green tomatoes - 2 qt
- sweet green peppers - 1 doz
- ground mustard - 4 Tbsp
- sweet red peppers - 1 doz
- medium-sized onions - 1 doz
- whole mixed pickling spices, tied in bag - 2 Tbsp
How to make chow-chow:
Chop onions and peppers fine. Combine all vegetables and mix with salt. Let stand overnight. The next morning, drain well. Combine sugar, spices and vinegar. Bring to boiling point and simmer about 20 minutes. Add drained vegetables and simmer to desired consistency. Remove spice bag.
