  • vegetable oil - 4 Tbsp
  • medium onions - 2 item
  • hard-boiled eggs - 2 item
  • chicken livers - 1 lb
  • salt and fresh ground pepper to taste - 1 item

How to make chopped chicken liver:

Chop onions. Saute 1 1/2 onions and chicken livers in 2 tablespoons of oil over low heat until livers are thoroughly cooked and crumble easily and onions are brown, but not burned.

Place in bowl and chop with the two hard-boiled eggs. Put remaining 1/2 chopped onion and 2 tablespoons of oil in skillet, briefly turning heat on high. Scrape contents of skillet into bowl and combine with chopped liver and egg mixture. Add salt and pepper to taste. Add a little more oil if you want a smoother consistency, but livers should be crumbly. Chill an hour or more.
