Ingredients/Components

  • salt
  • water - 2 c
  • chopped onion - 2 Tbsp
  • soy sauce - 2 Tbsp
  • can bean sprouts - 1 item
  • flour or cornstarch - 2 Tbsp
  • slivered green pepper - 1/4 c
  • slivered celery - 1/2 c
  • cooked rice or Chinese noodles - 1 item
  • lean veal, cut in small cubes - 1/2 lb
  • lean pork, cut in small cubes - 1/2 lb

How to make chop suey:

Brown meat lightly in skillet. Add 2 cups of water and salt. Simmer until tender (1/2 hour). Combine flour and 1/4 cup of water; substitute cornstarch for flour for shiny, thick chop suey. Stir into hot meat. Add green pepper, onion and celery. Cook 15 to 20 minutes. Add bean sprouts and soy sauce. Heat 10 minutes or more to blend. Serve over rice or noodles.

May add bead molasses for darkness and flavor, 1 to 2 tablespoons. One tablespoon of catsup adds flavor, too.

Preparation time: 15 minutes. Cooking time: 1 hour.
