  • cinnamon - 1/2 tsp
  • cream cheese - 8 oz
  • vanilla - 2 tsp
  • salt - 1/2 tsp
  • flour
  • butter - 1 c
  • oil - 1/2 c
  • buttermilk - 1/2 c
  • baking soda - 1 tsp
  • chocolate chips - 1 c
  • large eggs - 2 item
  • grated zucchini - 2 c
  • box confectioners sugar - 1 lb
  • cloves - 1/2 tsp
  • plus 2 Tbsp - 1/4 c
  • walnuts - 3/4 c

How to make chocolate zucchini cake:

Cake: Cream 3/4 cup butter, oil and sugar; beat in eggs. Beat in buttermilk and 1 teaspoon vanilla. Stir in 1/4 cup cocoa, flour and baking soda. Add cloves and cinnamon and fold in zucchini. Add chocolate chips and walnuts. Bake at 350° for 25 minutes.

Frosting: Beat remaining butter, cream cheese, confectioners sugar, 1 teaspoon vanilla and 2 tablespoons cocoa powder until smooth.
