Ingredients/Components
- sugar
- cinnamon - 1/2 tsp
- cream cheese - 8 oz
- vanilla - 2 tsp
- salt - 1/2 tsp
- flour
- butter - 1 c
- oil - 1/2 c
- buttermilk - 1/2 c
- baking soda - 1 tsp
- chocolate chips - 1 c
- large eggs - 2 item
- grated zucchini - 2 c
- box confectioners sugar - 1 lb
- cloves - 1/2 tsp
- plus 2 Tbsp - 1/4 c
- walnuts - 3/4 c
How to make chocolate zucchini cake:
Cake: Cream 3/4 cup butter, oil and sugar; beat in eggs. Beat in buttermilk and 1 teaspoon vanilla. Stir in 1/4 cup cocoa, flour and baking soda. Add cloves and cinnamon and fold in zucchini. Add chocolate chips and walnuts. Bake at 350° for 25 minutes.Frosting: Beat remaining butter, cream cheese, confectioners sugar, 1 teaspoon vanilla and 2 tablespoons cocoa powder until smooth.
