- sugar
- eggs - 2 item
- vanilla - 1 tsp
- pkg - 1 oz
- salt - 1 tsp
- butter - 1/2 c
- oil - 1/2 c
- soda - 1 tsp
- buttermilk - 1/2 c
- sifted flour
- nuts, chopped - 3/4 c
- baking cocoa - 1/2 c
- unpeeled, grated zucchini - 2 c
How to make chocolate zucchini cake:
Sift first 4 ingredients; set aside. Cream butter, oil and sugar until light. On medium speed, beat eggs, one at a time, beating well after each addition. Blend in vanilla. Add dry ingredients alternately with buttermilk to creamed mixture. Beat well after each addition. Stir in zucchini. Pour in 13 x 9-inch pan. Sprinkle with chocolate chips and nuts.
