brown sugar - 1 C
granulated sugar - 1/2 C
butter - 1/2 C
oil - 1/2 C
eggs - 3 item
vanilla - 1 tsp
buttermilk - 1/2 C
flour
allspice - 1/2 tsp
cinnamon - 1/2 tsp
salt - 1/2 tsp
baking soda - 2 tsp
Cocoa - 4 Tbsp
chocolate chips - 1/2 1

How to make chocolate zucchini cake:

Cream brown sugar, granulated sugar, butter and oil together in large bowl. Add eggs, vanilla and buttermilk to sugar mixture and mix well. Sift together all the dry ingredients (flour, allspice, cinnamon, salt, baking soda, and cocoa). Add flour mixture to the sugar mixture and mix well. Add grated zucchini and mix well.

Pour cake mixture into a greased and floured 9 x 13 cake pan. Sprinkle chocolate chips over the top. Bake for 45 minutes in a 325 degree oven.

(Light moist cake that doesn't stay around long. good way to get the kids to eat zucchini.)
