Chocolate peanut drops
Ingredients/Components
- granulated sugar - 1/2 c
- vanilla extract - 1 tsp
- large egg - 1 item
- all-purpose flour - 1 c
- packed light brown sugar - 1/3 c
- crunchy peanut butter
- semi-sweet chocolate chips, melted - 1/2 c
- butter or margarine not spread, at room temperature - 1 stick
- unsalted, roasted peanuts, chopped - 1/4 c
How to make chocolate peanut drops:
Topping:1/3 c. crunchy peanut butter1/3 c. packed light brown sugar1 Tbsp. all-purpose flour1/4 c. unsalted, roasted peanuts, chopped Heat oven to 350°. Grease cookie sheet(s).Beat butter and sugar in a large bowl with mixer until pale and fluffy. Beat in egg and vanilla, then the chocolate. Stir in flour until thoroughly blended. Drop heaping teaspoon 2 inches apart on prepared cookie sheet. Spoon 1 teaspoon peanut butter mixture on middle of each. Press down slightly with back of spoon. Sprinkle with chopped nuts. Bake for 10 to 12 minutes until cookies look dry. Cool a few minutes before removing to wire rack to cool completely. Makes 24.
