Chocolate mousse



  • sugar - 1/2 c
  • vanilla - 1 tsp
  • butter - 1/3 c
  • egg yolks - 5 item
  • cocoa - 3/4 c
  • heavy cream
  • egg whites - 4 item
  • rum optional - 5 tsp

How to make chocolate mousse:

Melt butter in small saucepan. Remove from heat. Stir in cocoa. Beat yolks in small mixer bowl with 1/2 cup sugar until thick and lemon colored. Beat in chocolate mixture, rum and vanilla.

Beat egg whites until foamy. Gradually add 1/4 cup sugar. Beat until stiff peaks form. Beat cream until stiff. Blend about 1/2 cup meringue into chocolate mixture until smooth. Blend in remaining meringue. Fold in whipped cream until well blended. Spoon into dessert dishes. Chill at least 2 hours. Garnish with mint.
