Ingredients/Components

  • sugar - 1 tbsp
  • semi-sweet chocolate - 12 oz
  • vanilla - 1 Tbsp
  • water - 1/4 c
  • heavy cream
  • egg whites - 6 item
  • envelope unflavored gelatin - 1 item
  • cream of tartar - 1/4 tsp
  • brandy - 1/3 c
  • egg yolks, beaten - 4 item
  • sugar, divided - 1 c
  • vanilla or brandy - 1 Tbsp
  • Heat until mixture is smooth and well blended

How to make chocolate mousse:

In top of double boiler, combine water, brandy, gelatin, 1/2 cup sugar and chocolate. Heat until mixture is smooth and well blended. Remove from heat and allow mixture to cool until it mounds with a spoon (stir frequently with a wire whisk). While chocolate mixture is cooking, beat egg whites until soft peaks form. Add cream of tartar and gradually beat in 1/2 cup sugar, beat until stiff peaks form; set aside.

In large mixing bowl, combine chocolate and egg yolks and whip until smooth. Slowly fold beaten egg whites into chocolate mixture; slowly fold whipped cream into the chocolate mixture. Mix until it is completely blended and smooth. Chill for at least 3 hours.Topping For Chocolate Mousse:1 c. heavy cream1 tbsp. sugar1 Tbsp. vanilla or brandy Beat cream until soft peaks form. Add sugar and brandy/vanilla. Beat until stiff peaks form. Refrigerate until needed.
