Chocolate mint cookies



  • eggs - 2 item
  • salt - 1/2 tsp
  • butter - 3/4 c
  • water - 2 Tbsp
  • baking soda
  • all-purpose flour
  • firmly packed brown sugar
  • semi-sweet chocolate pieces - 2 c
  • green chocolate mint wafers - 1 lb

How to make chocolate mint cookies:

In a large saucepan, over low heat, cook butter, sugar and water until melted. Add chocolate pieces and stir until partially melted. Remove from heat and continue to stir until completely melted. Pour into large mixer bowl and let stand 10 minutes to cool.

With mixer, beat in eggs, one at a time. Reduce speed and add dry ingredients, beating until blended. Chill dough about 1 hour.

Preheat oven to 350°. Line cookie sheets with foil. Roll into ball about 2 inches apart. Bake 12 to 13 minutes. Will crisp as they cool. Allow to soften. Swirl mint over cookies. Makes about 80.
