Ingredients/Components

  • sugar
  • vanilla - 1 tsp
  • cornstarch - 1 Tbsp
  • evaporated milk - 1 can
  • egg yolks - 3 item
  • cold water - 2 Tbsp
  • cocoa - 1/3 c
  • pinch of salt - 1 item
  • boiling water - 1/2 c
  • egg whites - 3 item
  • margarine - 1 Tbsp
  • unbaked 9-inch pie shell - 1 item
  • Heat until smooth and very warm

How to make chocolate meringue pie:

Combine sugar, cocoa, cornstarch and milk in saucepan. Heat until smooth and very warm. Stir in margarine, vanilla and egg yolks. Pour into unbaked pie shell. Bake 10 minutes at 425°, turn heat to 350° and bake 10 more minutes. Prepare Never Fail Meringue while pie bakes.Never Fail Meringue:1 Tbsp. cornstarch2 Tbsp. cold water1/2 c. boiling water3 egg whites6 Tbsp. sugar1 tsp. vanilla pinch of salt Blend cornstarch and cold water in a small saucepan. Add boiling water and cook until clear and thickened. Cool until completely cold. Beat egg whites at high speed until foamy. Gradually add sugar and beat until stiff, but not dry. Turn mixer to low, add salt and vanilla. Gradually add cornstarch mixture. Turn mixer to high speed and beat well. Spread over pie. Be sure meringue comes completely to edges. Bake at 350° until light brown, 10 to 15 minutes.
