How to make chocolate eclair cake:
Icing:1/3 c. cocoa1/4 c. evaporated milk1 c. sugar7 Tbsp. margarine1 tsp. vanilla chopped pecans (optional) Filling: Combine pudding and milk. Beat until thick, then fold in nondairy topping. In a 9 x 13-inch dish, layer bottom with graham crackers (whole, not crushed). Put a layer of filling mix, then another layer of crackers and mix, ending with a layer of crackers on top.Icing: Bring first 3 ingredients to a boil, stirring constantly. Let cool 1 minute and add 7 tablespoons of margarine and 1 teaspoon of vanilla. Mix thoroughly and pour over cake. Sprinkle chopped pecans on top (optional). Refrigerate overnight before serving.
