  • butter, softened
  • sugar - 3/4 c
  • vanilla extract - 1 tsp
  • salt - 1 tsp
  • flour - 3 c
  • shortening - 1 Tbsp
  • finely chopped nuts
  • c - 1 oz

How to make chocolate dipped shortbread cookies:

Preheat oven to 350°. In large bowl, combine butter, sugar and vanilla; beat until creamy. Blend in flour and salt. Shape dough into 1-inch balls, using one slightly rounded teaspoonful for each. Place on ungreased cookie sheets and flatten with bottom of glass dipped in sugar. Bake at 350° for 10 minutes. Remove from cookie sheets; cool. Melt over hot (not boiling) water, semi-sweet morsels and shortening. Dip each cookie halfway into melted chocolate. Shake off excess, roll in chopped nuts, if desired. Chill in refrigerator on waxed paper lined cookie sheets about 30 minutes. Makes about 5 dozen (1 1/2-inch) cookies.
