Chocolate crepes
Ingredients/Components
- sugar - 2 Tbsp
- eggs - 3 item
- vanilla - 1 tsp
- milk
- flour - 1 c
- cocoa - 2 Tbsp
- eggs, beaten - 3 item
- pinch of salt - 1 item
- chocolate chips - 1/2 c
- butter, melted - 2 Tbsp
- to 2 drops green food coloring - 1 item
- peppermint extract or 3 Tbsp - 3/4 tsp
- Beat well with a whisk or electric mixer until well blended
How to make chocolate crepes:
Combine all ingredients in a mixing bowl. Beat well with a whisk or electric mixer until well blended. Or place ingredients in a blender jar and blend until well mixed. Let batter rest 2 hours if possible. Cook in crepe pan or frying pan.For Filling:1/4 c. cornstarch1/2 c. sugar pinch of salt3 eggs, beaten2 c. milk3/4 tsp. peppermint extract or 3 Tbsp. creme de menthe1 to 2 drops green food coloring1/2 c. chocolate chips Mix cornstarch and sugar together in saucepan. Add salt and milk. Cook over direct heat until mixture comes to boil and thickens. Stir constantly.Stir a few spoonfuls of the hot mixture into the beaten eggs. Add eggs to the hot mixture and cook over very low heat a minute or two until eggs are just cooked. Do not boil. Add extract or creme de menthe. Cool and add chocolate chips. Fill crepes with this mixture. Garnish with whipped cream and a few chocolate chips, if desired.
