Chinese fried rice
Ingredients/Components
- cooking oil - 3 Tbsp
- beaten eggs - 2 item
- diced, fully cooked ham - 1/2 c
- finely chopped fresh mushrooms - 1/4 c
- thinly sliced green onions - 1/4 c
- cooked rice, chilled - 4 c
- soy sauce - 3 Tbsp
How to make chinese fried rice:
In a 10-inch skillet heat 1 tablespoon of oil. Add beaten eggs and cook without stirring until set. Invert skillet over a baking sheet to remove cooked edges. Cut into short, narrow strips.In the same skillet heat the remaining oil and cook the ham, mushrooms and green onions in the hot oil for 4 minutes or until mushrooms and onions are tender. Stir in the cooked rice and egg strips. Sprinkle with soy sauce. Heat through, tossing gently to coat with soy sauce and serve. Add more soy sauce if desired.
