Ingredients/Components

  • sugar - 1/2 c
  • salt - 1 Tbsp
  • vinegar
  • chopped onion - 1 c
  • bay leaf - 1 item
  • celery seed - 1 Tbsp
  • whole cloves - 1/2 tsp
  • mustard seed - 1 tsp
  • green peppers - 1/2 lb
  • whole allspice - 1/2 tsp
  • red peppers - 1/2 lb
  • peeled, cored tomatoes - 7 lb

How to make chili sauce:

Tie spices in a piece of cheesecloth. Chop all vegetables. Simmer together until mixture begins to thicken, stirring occasionally. Add sugar and vinegar. Cook, stirring often, until mixture becomes a thick sauce. Remove spice bag. Pack into sterile jars; seal. Makes about 3 pints.
