  • flour - 3 Tbsp
  • eggs, separated - 4 item
  • salt and pepper to taste - 1 item
  • can evaporated milk - 1 oz
  • Monterey Jack cheese, grated - 1 lb
  • Cheddar cheese, grated - 1 lb
  • cans green chilies - 2 3

How to make chili rellenos casserole:

Remove seeds, rinse and flatten chilies. Put half in a 9 x 13-inch pan. Cover with Cheddar cheese, then remaining chilies and Jack cheese. Beat egg yolks with milk, flour, salt and pepper. Beat egg whites until stiff and fold in yolk mixture. Pour egg mixture over casserole. Bake at 325° for 45 minutes to 1 hour until lightly browned.
