Chili rellenos
Ingredients/Components
- eggs - 6 item
- milk - 4 c
- salt - 1/4 tsp
- flour - 3/4 c
- green onions, sliced - 4 item
- sharp Cheddar cheese, grated - 3 c
- Mozzarella cheese, grated - 3 c
- cans green chiles - 2 oz
- salsa your favorite - 8 oz
How to make chili rellenos:
Split chili peppers lengthwise and remove seeds. Spread in a single layer in a greased 9 x 13 baking dish. Sprinkle Cheddar cheese, green onions and 1 1/2 cups of Mozzarella over chiles. In a bowl, beat eggs, milk, flour and salt together until smooth. Pour over chiles and cheese. Bake in a 325° oven for 50 minutes or until a knife inserted in custard comes out clean.Meanwhile, mix salsa with the remaining 1 1/2 cups Mozzarella cheese. When 50 minutes are up, sprinkle over casserole and return to oven for 10 minutes or until cheese melts. Let stand for 5 minutes before serving.
