Ingredients/Components

  • eggs - 10 item
  • salt - 1/4 tsp
  • flour - 1/2 c
  • baking powder - 1 tsp
  • butter or oleo - 1/2 c
  • small curd cottage cheese - 1 lb
  • cans green chilies - 2 oz
  • Jack cheese, shredded Monterey - 1 lb

How to make chili egg puff:

Beat eggs until light and lemon colored. Add flour, baking powder, salt, cottage cheese, Jack cheese and melted butter. Blend until smooth. Stir in chiles. Bake at 350° for 35 minutes, until top is brown and center firm. Serves 4 people. Breakfast or lunch.
