Ingredients/Components

  • chili powder - 1 Tbsp
  • bay leaf - 1 item
  • shredded Cheddar cheese - 1/4 c
  • lean ground beef - 1/2 lb
  • ground cumin - 1 Tbsp
  • red pepper flakes - 1 tsp
  • cloves minced garlic - 2 item
  • medium green pepper, chopped - 1 item
  • ground coriander - 1 tsp
  • low sodium tomato paste - 1 Tbsp
  • low sodium beef broth - 1 c
  • large yellow onion, chopped fine - 1 item
  • boneless, skinless chicken breasts, chopped fine - 1/2 lb
  • can low sodium tomato puree - 1 item
  • each oregano and basil - 1 tsp

How to make chili con carne:

Spray 10-inch skillet with nonfat cooking spray. Set over moderate heat for 30 seconds. Add ground beef and chicken. Stir often until no longer pink (4 to 5 minutes). Push to one side of the skillet.

Add onion, green pepper, garlic, chili powder and cumin. Cook until onion is soft (5 minutes). Add tomato, beef broth, tomato paste, red pepper flakes, coriander, oregano, basil and bay leaf. Simmer 20 minutes. Add kidney beans. Simmer 5 minutes. Remove bay leaf.
