Chili bake
Ingredients/Components
- sugar - 2 tsp
- eggs - 2 item
- milk
- salt - 1/2 tsp
- butter - 4 Tbsp
- baking powder
- shortening
- medium onions, sliced - 4 item
- corn meal - 1 c
- celery stalks, chopped - 4 item
- canned red kidney beans - 2 c
- ground or cubed meat - 2 lb
- canned strained stewed tomatoes - 2 c
- each: salt, red pepper and chili powder - 1 tsp
How to make chili bake:
Saute meat and onions in butter until browned. Add tomatoes, beans, celery, salt and pepper. Simmer for 1 1/2 hours. Add chili powder and simmer 30 minutes more.Scald milk and pour over corn meal and shortening. Cool. Add beaten eggs, baking powder, salt and sugar. Mix well. Pour into a greased flat pan. Now pour the chili mixture on top of the corn bread mixture and bake in a hot 400° oven about 30 minutes or until brown.
