Ingredients/Components

  • vegetable oil - 2 Tbsp
  • chili powder - 2 Tbsp
  • ground beef - 3 lb
  • large onions, chopped - 6 item
  • tomato paste - 1 Tbsp
  • cloves garlic, chopped - 7 item
  • celery salt
  • can tomatoes - 1 oz
  • Worcestershire - 2 Tbsp
  • bacon grease - 2 Tbsp
  • ground coriander seed - 2 Tbsp
  • can tomatoes undrained - 1 oz
  • can chopped green chilies undrained - 1 oz
  • can red kidney beans undrained - 1 lb
  • Pickapeppa sauce - 2 Tbsp
  • very hot peppers - 6 item
  • each: salt, celery seed and ground cumin - 1 Tbsp
  • each: black pepper, oregano and red pepper - 1 tsp

How to make chili:

In Dutch oven, gently cook onions in bacon grease and vegetable oil until softened but not brown. Add garlic and hot peppers; continue cooking until soft but not brown. Add beef, crumbling with fork. Cook gently until beef loses its red color. Over low heat, stir in tomatoes, tomato paste, chilies, Worcestershire sauce, Pickapeppa sauce, salt, black pepper, oregano, celery salt, celery seed, coriander seed, cumin, red pepper and chili powder. Cover; cook over low heat for 2 hours, stirring occasionally. Stir in beans; stir often. Cook 1 more hour. Refrigerate 24 hours to allow flavors to blend. Makes 3 quarts.
