Chile rellenos
Ingredients/Components
- flour - 4 Tbsp
- eggs, separated - 4 item
- water
- pinch of salt - 1 item
- oil to fry in - 1 item
- to 20 Anaheim peppers - 15 item
- to 20 thin strips Jack cheese - 15 item
- to 20 thin strips Velveeta I use King Soopers brand - 15 item
How to make chile rellenos:
Roast and peel peppers. Slit them down the center, lengthwise and fill with both kinds of cheese. Seal and roll in flour. Continue until all peppers are done. Separate eggs and whip whites until medium peaks form.In separate bowl, stir yolks, flour, water and salt. Fold into egg whites. Heat oil. I use number 5 on my electric stove. Dip the chiles in batter and fry. Turn until both sides are browned. Drain on paper towels. If you want to cook these before you want to serve them, put them on a cookie sheet and keep warm. Turn up to 300° a few minutes before serving for crispness.
