Chile relleno casserole



  • flour - 3 Tbsp
  • eggs, beaten - 3 item
  • can tomato sauce - 1 oz
  • small can evaporated milk - 1 item
  • Jack cheese, grated - 1 lb
  • Longhorn cheese, grated - 1 lb
  • cans whole green chiles - 3 oz

How to make chile relleno casserole:

Wash and remove seeds from chiles. Pat dry. In a 9 x 13-inch pan, layer half chiles, half cheeses and repeat, but save 1/2 cup cheese for topping.

Beat eggs. Add flour and milk. Beat until well blended. Pour over chiles and cheese. (May be refrigerated at this point.) Bake at 350° for 30 minutes. Spread with tomato sauce and cheese. Bake 15 minutes longer. Allow to cool 15 minutes before serving.
