Chicken with rice
Ingredients/Components
- water - 2 c
- margarine - 1 Tbsp
- chopped onion - 1/2 c
- chopped celery - 1/2 c
- chopped green pepper - 1/2 c
- rice - 1 c
- oil for frying - 1 item
- salt and pepper as desired - 1 item
- frying chicken, cut into pieces - 1 item
How to make chicken with rice:
Place the water, salt and margarine in a 2-quart pan with a tight lid. Bring the water to a boil. Add the rice and stir; put the lid on the pan and turn the heat to low. Simmer for 20 minutes. Do not take off the lid and do not stir again.Using just enough oil to keep the chicken from sticking, brown the chicken pieces in a skillet. Drain off any excess fat and grease that cooks out of the chicken. Use this grease or a little oil to saute the vegetables until they change color. When the rice is done, add the sauteed vegetables to the rice and place this mixture over the top of the browned chicken. Simmer this until the chicken is tender and the flavor has had a chance to blend with the rice. An electric skillet works well or a casserole in the oven.
