Ingredients/Components

  • oil - 3 Tbsp
  • ginger - 1/2 tsp
  • lemon juice - 1 Tbsp
  • honey - 1/2 c
  • pepper - 1/4 tsp
  • salt optional - 1/2 tsp
  • can frozen orange juice - 1 oz
  • chicken stock - 1/2 c
  • chicken breast halves, skin off - 6 item

How to make chicken with orange sauce:

Spray pan with Pam. Season chicken breast with salt, ginger and pepper; place in pan (9 x 11-inch) and set aside. Combine the chicken stock, orange juice, honey and lemon juice and bring to boil, thicken slightly with 1 tablespoon cornstarch. Spoon sauce over and under chicken. Cover with foil. Bake at 350° until tender, turning once (45 to 55 minutes). Serve over rice pilaf. (Can freeze, defrost overnight in refrigerator and reheat, covered, at 325°.)
