  • butter - 1 Tbsp
  • salt and pepper to taste - 1 item
  • cloves garlic - 2 item
  • olive oil - 6 Tbsp
  • mushrooms - 1 lb
  • sherry - 1/2 c
  • broiler, cut up - 1 (3
  • large, sliced onion - 1 item

How to make chicken with mushrooms:

Heat butter in a large, covered skillet. Add garlic and 4 tablespoons of olive oil. Brown chicken on both sides for about 10 minutes. Lower flame, cover and continue cooking about 25 minutes. Saute sliced onion in 2 tablespoons olive oil in separate saucepan for 5 minutes. Add sliced mushrooms. Simmer 15 minutes, then add to chicken. Cover and simmer for 15 minutes longer. Pour in sherry; boil up quickly for 1 minute. Serves 4.
