Ingredients/Components
- , cut into pieces - 1 broiler-fryer
- flour - 1/2 c
- salt
- pepper - 1/4 tsp
- olive oil - 1/2 c
- clove garlic, sliced - 1 item
- Marsala - 2 Tbsp
- chopped parsley - 1/2 tsp
How to make chicken vesuvio:
Coat chicken pieces with a mixture of flour, salt and pepper. Heat 1/2 cup oil in a large skillet. Add chicken pieces and brown on all sides. Put into a large shallow baking dish. Heat 2 tablespoons oil and garlic until garlic is lightly browned. Add Marsala and parsley. Mix well. Pour over chicken in baking dish. Bake at 325° about 45 minutes or until chicken is tender, turning only once. Makes 4 servings.Recipe categories: Chicken, Main dish, Poultry.
