Chicken tortilla soup
Ingredients/Components
- butter - 2 Tbsp
- cans chicken broth - 2 item
- can corn - 1 item
- cumin - 3 Tbsp
- red onion, chopped - 1 c
- red bell pepper, chopped - 1 item
- cans stewed tomatoes - 2 item
- boneless skinless chicken breasts, cubed - 4 item
- garlic buds, chopped - 2 item
How to make chicken tortilla soup:
Cook chicken in butter and add next 3 ingredients. Cook until tender. Add broth, tomatoes, corn, picante sauce and cumin. Bring to boil. Reduce heat and cook for 20-30 minutes, covered.To serve: cut up flour tortilla in bite size pieces; cube monterey jack cheese. Place tortilla in soup bowl; add soup; place cheese on top. Delicious.
